Recipes for Basil Pesto and Orecchiette

Basil Pesto

Ingredients
- Basil
- Nuts, toasted
- Garlic
- Grated Parmesan Cheese
- Extra Virgin Olive Oil
- Salt
- Pepper
Method of Preparation

Grind Garlic. Grind Nuts. Grind Basil in mortar “dry”. Add olive oil, grind in to homogenize. Stir in Parmesan, salt, pepper.

Orecchiette Dough

Ingredients
- 1/2# Durum Flour
- 1/4# All Purpose Flour
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 teaspoon salt
- 1/2 Cup plus 2T. warm water
